Portioning out lamb spleen to individually freeze. It's larger than goat spleen, and smaller than pork spleen. Obviously much smaller than beef spleen.

Speaking of Tripe... We add ox tripe in a local delicacy called GoTo... It's beef soup with rice and ox tripe. Others add beef cuts but it's fine without it.
